Ivan Saiz Sordo

Chef de Cuisine Ivan Saiz Sordo was personally selected by our Creative Culinary Director and consultant, Chef Chele Gonzalez, to oversee the daily operations and execute his well-crafted menu. Both chefs hail from the region of Cantabria and have worked together for various restaurants in the Philippines. Their lineage and common love for seafood brought them back together at The Westin Manila, to showcase flavors they learned and loved growing up. 

Chef Sordo previously worked in several Michelin-starred restaurants in Spain, as well as five-star hotels such as the Sheraton Mallorca Arabella Golf Hotel and The Ritz-Carlton Tenerife, Abama. In the Philippines, he worked in notable fine dining restaurants such as Gallery Vask, before joining Cantabria as Chef de Cuisine.

Chele Gonzalez, our Creative Culinary Director and consultant, is one of the most recognized and influential chefs in Asia. Cantabria is his love letter to home, offering diners a taste of his region through an exquisite menu inspired by his childhood summers and culinary beginnings.
