Álvaro Romero-abreu Raya grew up in Cadíz and has trained and worked in Michelin-starred restaurants, including being part of the Research and Development team of Mugaritz—a fine dining restaurant in the northern Spain and considered one of the best in the world with 2 Michelin stars to its name.

He is bringing both expertise in traditional Spanish dishes and thoughtful innovation of the classics as he takes the helm in the kitchen and oversees the execution of Chef Chele Gonzalez's well-crafted menu and standards at our Manila restaurant.
